Butternut Squash Soup

Medium to large butternut squash, halved with seeds removed and then cubed | Extra virgin olive oil | Water or chicken stock | Salt and pepper to taste | Optional garnishes ideas: pepitas, feta cheese, paprika, pomegranate seeds

Instructions
In a large saucepan, heat the olive oil over medium heat and sauté the cubed squash until the begin to soften. Add enough water or chicken stock to cover, and then simmer for approximately 20 minutes or until the squash is soft all the way through.  Using a blender or stick blender, puree the squash until smooth.
