Fall Fun Bucket List

Fall fun bucket list includes make butternut squash soup, dress up at home in costumes, spread random kindness, learn with mini pumpkins, tastes of fall movie night

1. Make butternut squash soup

Along with the first hint of cool, fall air comes thoughts of warm, inviting autumn soups. Earthy in fragrance and taste, this simple butternut squash soup recipe is a favorite for all ages. (Scroll to the bottom for the recipe).

2. Dress up at home in costumes

Costumes and dress-up aren't just for Halloween night. Make it a fun activity day or night, you can even get the whole family involved and incorporate even more fun and laughter by making up silly faces or dances.

3. Spread Random Kindness

Make it an October to remember for yourself and others by spreading random kindness wherever you can. A simple bouquet of wildflowers left on the doorstep of a friend or neighbor is sure to fill their heart with love.

4. Learn with mini pumpkins

With so many shapes, sizes, and colors of mini pumpkins and gourds, there's never been a better time to learn with the season. These bountiful autumn veggies are the perfect size for little hands and lend themselves to an array of teaching moments. Count them, or sort them by color or shape, and when you're done let the decorating begin!

5. Tastes of fall movie night

Pumpkin spice and everything nice! Make an adventure of finding different fall flavors to create a fall movie night filled with tastes of the season.

Butternut Squash Soup

Medium to large butternut squash, halved with seeds removed and then cubed | Extra virgin olive oil | Water or chicken stock | Salt and pepper to taste | Optional garnishes ideas: pepitas, feta cheese, paprika, pomegranate seeds

In a large saucepan, heat the olive oil over medium heat and sauté the cubed squash until the begin to soften. Add enough water or chicken stock to cover, and then simmer for approximately 20 minutes or until the squash is soft all the way through.  Using a blender or stick blender, puree the squash until smooth. Season with salt and pepper to taste.  Be creative with your garnishes. Toasted pepitas, feta cheese, pomegranate seeds, and paprika are some of our favorites.
